Burn Unit started with hardwood charcoal, but that was just to get the initial layer down. That fancy "charwood" stuff is Awesome, but I find it burns too hot and fast for this kind of cooking--either that or I just am a stick in the mud and like to layer on the kingsford as the day goes on.
