			Passed onto me as an essential element of eating sushi properly, tonight I shared the secret of blending wasabi to soy:
Start with the wasabi, add a wee bit of soy sauce, blend with the blunt end of a chopstick into a wasabi/soy sauce paste, then add however much soy sauce you require.
These instructions were written on a straw wrapper with a sushi menu pencil for the next inhabitants of table 32 at Shiki Sushi in Durham, NC.
