When I visited New Mexico, last May, for a friend's wedding, we ate at the most amazing New Mexican breakfast/diner joint. I had the most incredible chile sauce of my entire life. You can buy their frozen chile sauce by the half gallon. I did so and it made it all the way home to Atlanta even on the plane! I was so amazed! The next week we made the greatest homemade Huevos Rancheros of our lives. And then we swore to only open up this sucker on special occasions. We decided that it is not best that we refreeze the chiles, so we kept it in the fridge. And we seriously only ate half of the bucket until I forgot about it (kept telling myself I didn't deserve the chiles this weekend). What a bad idea!!!! That stuff went really bad after 6 mos (last I checked). It's actually still back there, hoping that it will one day magically appear new again (ie. I'm in denial that I ruined the best half gallon of chiles of my life!!!!)
