it's old. Really old. I used it once, and made the most amazing Pad Thai with it. I kept it, assuming it had a long shelf life, but no one has ever been able to tell me with certainty how long it really keeps. I guess I'm hoping in the next few years I'll find out it keeps forever.
(Oh, and I double-checked, and it is considered a condiment.)
