The Shadow Is You by The Vixen

July 18th, 2007 11:58 PM

INSTRUCTIONS: Make a self-portrait with a shadow that is you.

My mother always told me that I'd be a horrible gardener (clutches at her prize winning antique roses). Well, I have cultivated the world's first heirloom tomato tree. Take that, Mom!

Since when would you make a tomato pie? Would you use tomato jam? How about a delicious tomato ice cream sundae? I think not. (but maybe that's just me)

I have eaten tomato jam. It's good. Here's the recipe:

TOMATO JAM (OLD-TIME)

About as many tomatoes as will go into your largest pot. Scald, peel, cut into small pieces. Cover with 1/2 cup vinegar. This keeps tomato jam from going to sugar. Let sit overnight. Strain, I squeeze the tomatoes a little with my hand. Measure cup for cup, sugar and tomato pulp. Cut 1 lemon in very small pieces, skin and all. Sometimes I add a little ginger. Cook until it forms a web between the prongs of a fork. This may take an hour or more. Stir frequently, especially at the beginning and end.

Pot should be about 3 or 4 quart. Ginger is 1/2 teaspoon.

TomatoIceCream.jpg.

THE VITAMIX IS IT!

It was pinkish in color. So naturally they thought it was strawberry ice cream. Their first bite told them it wasn't. That was followed by a second bite. Despite the puzzled looks on their faces, I could tell they liked it. They began to roll their tongues against the tops of their mouths -- hoping their taste buds would recognize the flavor.

A third bite. Then Alice said, "I like this flavor. What is it?"

Beth chimed in, "This tastes great, but I can't tell what flavor it is."

I could tell John's mental wheels were racing. He wanted his tongue to be the first to reveal the mystery flavor. His first words, "I like the taste of this, but it has an unusual flavor. And I'm not sure I've ever eaten anything quite like it."

By now, I was dying to see the expressions on their faces when I told them my secret. Boastfully, I blurted out, "It's fresh tomato ice cream!"

In unison and utter disbelief they said, "You've got to be kidding!"

I was quick to point out, "Why not ice cream made from tomatoes? Technically they are a fruit, and I have never tasted ice cream made from a fruit that wasn't delicious!"
