If it's being consumed, and not just tasted in situ, I think I'd be inclined to count skin. Particularly if you made cracklings out of it or something.
iteguments do not count as flesh. Says wiki.
Also it says: "Flesh may be used as food, in which case it is is called meat." what kind of gives a wiki-legitimation for this task.
I personally find eating another players flesh deserves more points if the skin doesn't count. Also the player contributing the flesh to the task's completion should be awarded a great amounts of points!
Somewhat tangentially, how many times would you have to take communion before you had eaten an entire Christ?
Or is it like homeopathy, or martini-making, where they just shine some light through the body onto the wafer?
Does this even help anyone's thinking on this task? No, I guess not. I'll just go and disappear for a while again and keep trying to fix that video...
